Fudgy Yummy Brownies

Ingredients

  • 227g. butter, to be browned

  • 90g. Dutch-process cocoa powder

  • 113g. dark or semisweet (60% cacao) chocolate, finely chopped

  • 1 tsp. instant espresso powder (or 1 Tbsp instant coffee)

  • 300g. white sugar

  • 100g. brown sugar

  • 1 Tbsp vanilla

  • 4 eggs

  • 120g. All Purpose flour

  • 1 tsp. kosher salt

Insrtuctions

  1. Preheat the oven to 175°C. Grease a light-colored 9×13-inch baking pan or line with parchment paper, leaving overhangs for easy removal.

  2. Place the cocoa powder, chopped chocolate, and espresso powder in a heatproof bowl and set aside.

  3. Make the brown butter: Melt the butter in a light-colored saucepan over medium-low heat. Stir occasionally as it foams, then watch closely as brown bits form and smell nutty. Remove from heat immediately.

  4. Pour the hot brown butter over the cocoa and chocolate mixture. Stir until smooth and melted. Let cool slightly.

  5. In a large bowl, beat the eggs, sugars, and vanilla with a hand or stand mixer until thick, fluffy, and lighter in color (about 4–5 minutes for extra-fudgy brownies).

  6. Reduce mixer speed to low and slowly mix in the chocolate-butter mixture until fully combined.

  7. Gently fold in the flour and salt just until incorporated. Fold in extra chocolate if using. The batter will be thick.

  8. Spread the brownie batter evenly into the prepared pan.

  9. Bake for about 25 minutes, until the top looks glossy and the center is just set. Do not overbake.

  10. Cool for at least 30 minutes before removing from the pan and slicing.
